Sunday Sauce with Meatballs

In a large pot, add diced onions and olive oil and sautee for 2-3 minutes. Add the pork neck bones. Brown these in the pot, about 5 minutes, then add crushed garlic and sautee 1 more minute. Add your canned tomato sauce, dried herbs (oregano, basil, parsley), romano, and a chunk of provolone. Reduce to a simmer and keep it that way for about 2 hours or until people start asking what smells so good. At this point, the neck bones are ready to serve as a snack.
